Fridge Storage Times

How long each food lasts in the fridge: approximate times and practical notes to plan meal prep safely.

Facondia Lab by nicastro.in

This is the question most frequently asked by readers of meal prep books, and one that no one can answer with absolute precision. Below you'll find approximate times; consult them, always remembering to seal the containers tightly and store them on the correct shelves in the refrigerator to keep them at the best temperature. Before consuming each meal, check that it doesn't look or smell strange or unusual.

ZoneFoodDays in the fridgePractical notes
2Cooked rice and quinoa4-5 daysStore unseasoned to prevent them from drying out. Add a splash of water before heating.
2Cooked legumes4-5 daysKeep them with a little of their cooking water to keep them softer.
2Cooked chicken breast3-4 daysStore it uncut, to make it last longer.
2Cooked fish2-3 daysThe most perishable and delicate. Eat it first or store it in the freezer and defrost when needed.
2Hard boiled eggs5-7 daysWith the shell intact. Once peeled, consume within 24 hours.
1Sautéed vegetables3-4 daysLet them cool completely before closing the container: steam creates humidity and accelerates spoilage.
4Chopped raw vegetables3-5 daysIn a semi-open container or with absorbent paper on the bottom to absorb moisture.
5Homemade sauces5-7 daysIn a closed glass jar. Those made with oil last longer; those made with fresh garlic last less.
1Soups and broths4-5 daysThey taste better the next day. Freeze half of them if you know you won't finish them during the week.

⚠ Never put hot food directly into the refrigerator

Hot food raises the internal temperature of the refrigerator, putting everything inside at risk. Let it cool to room temperature for at least 20-30 minutes before storing, and in any case, check the temperature manually before placing it in the refrigerator (there should be no residual heat).
